Orange Marmalade

I had 9 oranges that were sitting around and over the weekend I thought why not marmalade.

So simple but a bit time-consuming as I canned them as well.  I like my jam a bit on the runnier side like a sauce I can use on toast or dollop on ice-cream or make sticky buns out of….endless possibilities! Sliced oranges and sugar-water AKA simple syrup is all that is in this preserve.

The hardest part is the waiting for it to boil down….then waiting for the jars to sterilize….then waiting while you boil the jars. I love that “pop” sound you hear at the end when you take them out of the boiling water, it’s the snap of finality.

Best pay off is the next morning at breakfast.

Marmalade

  • Servings: 12

Marmalade Recipe

Ingredients:

  • 6 oranges sliced very thin peel included.
  • 8 cups of water
  • 7 cups of sugar

Directions:

Add all ingredients together and heat till the sugar dissolves. Let sit overnight. The next day, bring the mixture to a boil for 2 hours. It will start to turn more amber and thicken.  When it starts to read 220 degrees on a candy thermometer then you are ready to jar them up.

TIP: To check the consistency before you jar it you can drop a bit of the marmalade on a plate and chill it for 15 min or so, then tilt your plate and check the consistency of it. If it is still too runny for you then boil it away a bit more. 

Pour the marmalade in piping hot jars, lids should be hot as well. Place your jars in boiling water for 10 minutes to preserve them. You will hear an audible “pop” noise once taken out of the water and allowed to rest on counter till it comes to room temperature.  Do not tilt jars while they are sealing.

Fresh Berries with Bourbon Whipped Cream

I made a lime infused simple syrup to toss my berries in! Yum. To add some different texture to this dessert I made crunchy toffee lacy cookies. The whipped cream is freshly made with vanilla and bourbon 🙂

Fresh Berries with Bourbon Whipped Cream

  • Servings: 4-6
  • Difficulty: easy

Bourbon Whipped Cream

  • 1 cup of heavy whipping cream
  • 1 tsp of vanilla
  • 1 tbsp of bourbon
  • 2 tbsp of icing sugar

Mix all ingredients on high till hard peaks form. Store in fridge till ready to serve. Since there are no stabilizers in this whip cream it will lose some of the air you whipped in over time,  so I tend to make this in my mixer close to the time I want to serve it 🙂

Lime Infused Simple Syrup

  • 1 cup of water
  • 3/4 cup of sugar
  • zest and juice from 1 lime

Place water and the sugar in a saucepan and heat till sugar dissolves. Take off heat add the lime zest and lime juice, give it a quick stir. May keep in fridge for 1 week.

Berry Salad

  • 1 cup of chopped strawberries
  • 1/2 cup of blueberries
  • 1/2 cup of raspberries
  • 1/2 cup of blackberries
  • 1 tbsp of freshly chopped mint

Add berries to large bowl, drizzle in your simple syrup to coat berries. Toss well. Serve with Bourbon Whipped Cream.  Qu’est-ce que vous manger?

Salty Pear Martini

This is a wonderful winter time cocktail. I love making pear and blue cheese salads, pear crumbles, and now pear martini’s. If you never tried St Germain before it smells like grapefruit! Wonderful combination 😉

Salty Pear Martini

  • Servings: 1-2
  • Difficulty: easy

Ingredients:

  • 1 1/2 ounces of pear vodka
  • 3/4 ounce of St. Germain
  • 1/2 ounce of simple syrup
  • 1 whole squeezed lime or lemon

Directions:

Pour all ingredients into a shaker with some ice and “shake it baby,  shake it” Salt the rim of your martini glass I use kosher salt because you want larger grain salt for rimming a glass otherwise way to salty! I also add extra ice to my martini glass. Pour into your martini glass and enjoy!

Homemade Whiskey Sours

This is my absolute favorite cocktail the elbow grease that’s involved in hand squeezing 20 lemons and limes is so totally worth it.

Ok here it goes after you try this you just may want to buy a juicer it’s that yummy!

Ingredients:

  • 1 cup of freshly squeezed lemon juice

  • 1 cup of freshly squeezed lime juice

  • 1 3/4 -2 cups of whiskey……… (I use Canadian whiskey because I’m Canadian and that’s how I roll)

  • 2 cups of simple syrup (recipe to follow)

  • 2 cups of crushed ice

Directions:

Alright now take a big pitcher and add  all ingredients to the pitcher, stir well and enjoy!

Please note I love more of a sour flavor if you like it sweeter than add more sugar when making the simple syrup.

I serve this with a maraschino cherry in the glass also a splash of the cherry juice makes the drink very pretty to look at.
